One of Kumamoto’s signature dishes, horse meat is most frequently enjoyed with soy source, grated ginger, garlic, and seasoned with garnishes such as minced leak. As the oils and natural juices from the horse meet get released in low temperatures, eating the horse as sashimi (raw) allows you to enjoy a marbled effect in the meet. Using raw horse meet in sushi dishes is also popular.
