A breed of chicken that was extinct in the early Showa period, the Amakusa Daio was resurrected and brought back into existence following half a century of scientific research. Its large size is said to rank amongst the biggest breeds in Japan, and the meat percentage of its "thigh" (which is often eaten in Japanese cuisine) is more than the average chicken, and provides a tasty red meat that is chewy and flexible, with a very appealing, rich taste. In recent years, the amount of Amakusa Daio distributed has increased, making it one of Kumamoto’s new specialities.
