Hikado is a local Nagasaki dish which is said to be derived from the common stew. The name comes from the Portugese word “picado” which means “finely minced.” Minced radish, carrot, satsumaimo (sweet potato), as well as tuna or pork and more make up the ingredients of this dish. Grated satsumaimo is added as a finishing touch to make the stew thicker.
