Maguro (tuna) ramen is a local cuisine offered in Ichikikushikino City in the old Kushikino area of Kagoshima Prefecture. The tuna caught and loaded at the port of Kushikino is said to be always large in number, which led the local restaurant association to develop and promote a way in using tuna for making ramen. The soup base is made by boiling the head of tuna together with garlic, ginger, scallions, and vegetables before blending in bonito at konbu-flavored dashi. A little bit of soy sauce is also dropped for flavor. Medium-fine, wavy noodles complete the dish.
