One of Kumamoto’s signature dishes, horse meat is most frequently enjoyed with soy sauce, grated ginger and garlic, and seasoned with garnishes such as minced leak. As the oils and natural juices from the horse meat get released in low temperatures, eating the horse as sashimi (raw) allows you to enjoy the marbled effect of the meat. Using raw horse meat in sushi dishes is also popular.
